From Roots to Roux gives students place-based exposure to the breadth of the food and agriculture ecosystem, the people and professions that sustain it, and the environmental, historical, cultural, economic, and community contexts in which that work occurs. The course is designed for students with an interest in learning about smallholder agriculture and engaging with the people, places, questions, and perspectives encountered throughout the experience.

This is a domestic travel course that uses smallholder agriculture as a lens for exploring the people, systems, places, and relationships that shape agriculture. Through coursework at Iowa State and an immersive travel experience in New Orleans & Southern Louisiana, students will examine agriculture not only as production, but as part of a broader ecosystem influenced by research, technical assistance, markets, natural resources, history, culture, foodways, community institutions, and relationships with land and environment.

Course Credits: AGEDS 4960B (3 course credits)

Course Fee: $2625 ( Additional costs for meals and personal expenses are not included and will vary by individual.)

This program is offered for the first time in 2027.
